Pasta Frittata for Papa

Father's Day: that one day of the year when Dad gets to kick back and relax while Mom and kid take care of him. Fortunately for us, Dad likes to garden and do fun family activities, so we don't have to do much except make some yummy meals and keep his beverages cold.  Even though Mother's Day is known for brunch, the Dad in our house loves brunch. So what's the best way to show him our appreciation?  Make him eggs with veggies from his garden!  And since he happens to be Italian and frittatas remind him of his Dad, I made:

 

Pasta Frittata with Broccoli Rabe and fresh Tomato Sauce

 

Ingredients:

 

  • 8 eggs

  • 1/2 c. grated Parmesan cheese

  • 3 T EVOO

  • 3 T vegetable oil

  • 2 garlic cloves, sliced thin

  • 8 oz broccoli rabe, trimmed and cut into 1/2-inch pieces

  • 3 cups plus 1 T water

  • 6 oz. angel hair pasta, broken in half

 

Directions:

 

  1. Whisk eggs, Parmesan, olive oil, 1/2 tsp salt and 1/2 tsp pepper in large bowl until well-blended.

  2. Heat 2 tsp vegetable oil in 10-inch nonstick skillet over medium heat until shimmering.  Add garlic and cook until fragrant, 1 minute. Stir in broccoli rabe, 1 T water and 1/4 tsp salt. Cover and cook until broccoli rabe is crisp-tender, 2-3 mins. Transfer broccoli rabe to bowl with egg mixture.

  3. Wipe out skillet, then add remaining 3 cups of water, pasta, 7 tsp vegetable oil and 3/4 tsp salt. Bring to a boil and cook, stirring occasionally until pasta is tender, water has evaporated, and pasta begins to sizzle in oil, 8-12 mins. Reduce heat to medium and cook until bottom turns golden and starts to crisp, 5-7 mins.

  4. Using spatula, push pasta up sides of skillet to cover entire surface of pan. Pour egg mixture over pasta. Cover and cook over medium heat until bottom crust is golden brown and top is just set, 5-8 mins.

  5. Slide frittata onto large plate, then invert onto 2nd plate and slide back into pan, browned side up. Cook until second side is golden brown, 2-4 mins. Remove skillet from heat and let stand 5 mins. invert frittata onto cutting board. Cut into wedges and serve with fresh tomato sauce.
